The last remaining Laurissilva Cloud forest of ancient Europe still exists, a living breathing vestige of earths ancient past. A sub-tropical paradise full of scented flowering plants, and pre-historic laurel forest as well as plants indigenous to southern Europe. This magical honey is made by bees working in beehives sitting on the edge of the village of Sao Vicente on the wild and verdant North Shore of Madeira.
This raw honey is dark, rich and has real complexity, you can taste both the fruity notes of tropicals like passion flowers as well as dark earthy malty flavours which combine beautifully into a well rounded unusual and very moreish honey. It is also slightly more fructose than glucose so like all honey it crystallizes, albeit over a matter of several months.
We are lucky to be able to bring this honey to you as it is scarce, expensive and very hard to come by and has to be shipped from this outlying Portuguese island archipelago.
This honey is from a small scale artisan producer with a very limited production and you are very unlikely to find it anywhere else. Every batch throughout the year is distinctly different, we have tried to select the very best from this artisan producer, Mr Viera.

100% Raw, cold extracted, unfiltered, Wild Lavender honey, is the backbone of the Portuguese honey harvest, known locally as Rosmaninho, This honey is to Portugal what Acacia is to Italy.
Raw Wild lavender honey made from bees foraging on the Lavandula Stoechas plant, a wild ancestor of the cultivated lavenders without the perfumed lavender smell. It grows extensively over the hillsides of many areas of Portugal including the Algarve and Alentejo, where our honey comes from. This particular honey is a medium-sweet, delicate, floral, amber, silky textured honey, with an almost fruity backnote. Very versatile, superb everyday honey. Produced in the Algarve hills by master artisan beekeepers and happy bees. Its hard to beat Rosmaninho.

Honey and Crystallization. Crystallization is a completely natural process and occurs with all raw honey. The speed and size of the crystallization depends on variations in the balance of sugars, ambient temperature and to some extent water content If your honey is set hard, you can loosen it up by placing it in a pan of hand hot water, (and repeat as necessary) using a spoon placed in hot water first and of course storing it in a sunny/warm place in the house.

Chestnut Raw Honey is a silky, dark amber honey with the distinct floral, nutty taste of chestnut with the fragrance of chestnut flowers. Our Chestnut honey comes from the sweet Chestnut tree or Castanea Sativa. Chestnut honey can range from very dark and bitter to milder and sweeter depending on the proportion of Chestnut honeydew and other flower nectars.
This year, 2017 our Chestnut honey comes from a new producer in the Mirandela area of the far North-East of Portugal, an area famed for its chestnut forests in and around the Montesinho National Park. This is a rich, aromatic, beautifully balanced Chestnut honey, some of the best we've ever tried.
For all of you who use honey to sweeten your drinks, Chestnut honey is perfect in coffee, it complements the taste of coffee with a lovely nutty flavour. Its also adds a wonderful festive touch to Christmas desserts and glazes.
Chestnut honey is a honeydew honey, as well as a nectar honey, known for its antioxidant properties. Honeydew is rich in Oligosaccharides and is made by bees foraging on sweet aphid secretions, where aphids have first fed on the sap of the trees or even fruits. Owing to the composition of its sugars (low in glucose) it tends not to crystallize easily and stays runny longer.
