Dear Friends and Fans of the Mighty Arbutus, the long wait is nearly over. As of the 10th of February, the unusual and extremely rare honey from the delicate arbutus flower will be back on the shelves. Since its introduction, and to our mild surprise, despite its unique bitter/caramel flavour, Raw Arbutus honey has become a serious favorite with all of you. From Paleo diet adherents, to those who value its potent antibacterial and winter flu fighting properties and finally to those of you who just love the utterly distinct flavour. At present in its runny, dark red state, but very soon liable to crystallize into the thick caramel coloured power packed honey we love.Arbutus flowers in bloom earlier in the winter.

Honey is a unique alchemical distillation of ecology and climate. This year the rains came at the right time and the delicate bell shaped white Arbutus flowers were abundant, however the weather that followed was also mild enough and with enough dry and sunny spells that the bees were able to forage and make honey. However the mild weather also meant that the Eucalyptus trees were in flower longer than usual (still flowering) and this years Arbutus honey has a slightly higher proportion of Eucalyptus which gives it a mellow and slightly sweeter though unmistakably Arbutus honey flavour.
